Ingredients:

  • 2oz Brandy
  • 0.75oz Cinnamon Simple Syrup
  • 0.5oz Grapefruit Juice
  • 0.5oz Lemon Juice
  • 1 tbsp Blackberry Jam
  • 1 dash Angostura Bitters

Directions:

Preparation: combine ingredients in a mixing tin with ice and shake hard, then strain into a rocks glass and top with crushed ice. 

Garnish: Toasted cinnamon sticks (Toast cinnamon sticks with torch or over stove until they begin to smolder) and a few blackberries. 

*Cinnamon Simple Syrup: 
3 Cinnamon Sticks
2 c. Water
1.5 c. Sugar

Preparation: Combine cinnamon sticks and water in a small saucepan and simmer for 15 minutes, then remove cinnamon sticks and add sugar. Stir until sugar is dissolved and then cool.

Preparation: Combine all ingredients in mixing tin and shake, then strain into coupe or martini glass and garnish with a grapefruit twist.

Directions:

Shake ingredients over ice and strain into a chilled cocktail glass. Garnish with a lemon peel.

*Cinnamon Syrup: Simmer equal 1 cup sugar and 1 cup water with 4 cinnamon sticks. Let cool for 30 minutes, then strain out the cinnamon sticks. Store in the refrigerator for up to a month.

As Above, So Below

Ingredients:

  • 2 oz Bourbon
  • 2 oz Sweet Vermouth
  • .25 oz Maple Syrup
  • 3 dashes Bitters
  • pinch Salt
  • Maple Wood Chips
  • Liquid Smoke
  • Cloves

Directions:

In a beaker, place 4-5 ice cubes and then add the bourbon, vermouth, maple syrup, bitters and salt. Using a bar spoon, stir until chilled (about 20 seconds). Strain contents into martini glass. Cover with a cloche, and smoke with smoking gun. 

For an alternative home use, you can place the martini glass on a baking tray, place a few pieces of wood chips next to the glass and using a stick lighter ignite until if lights on fire. Cover with a large pot. By covering, the fire will lose oxygen and burn out. The residual smoke will flavor the cocktail. Leave cocktail covered for 2 minutes.

Ingredients:

  • 2 oz Dark Rum
  • 2 oz Cherry Juice
  • 0.5 oz Lime Juice
  • 0.25 oz Simple Syrup
  • 0.25 oz Grenadine
  • 3 oz Ginger Beer

Directions:

Fill a cocktail shaker with ice. Add rum, cherry juice, lime juice, simple syrup and grenadine. Shake contents together. Pour into glass filled with ice and top with ginger beer.
