

Flank Steak & Tropical Chimichurri
Ingredients:
- 1/2 cup Dark Rum
- Steak Ingredients
- ½ cup Dark rum
- 1 Lime, zested and juiced
- 2 Tbsp Brown sugar
- ¼ cup Soy sauce
- 1 cup Pineapple, chopped
- 2 lb Flank steak
- Tropical Chimichurri Ingredients
- ¼ cup Olive oil
- 1 Shallot, minced
- 2 Tbsp Red wine vinegar
- 1 Lime, zested and juiced
- 3 Garlic cloves, minced
- ½ tsp Salt
- ½ tsp Red pepper flakes
- ½ cup Cherry tomatoes, halved
- ½ cup Pineapple, finely chopped
- 1 cup Parsley, leaves removed and chopped
Directions:
Steak Directions
In a food processor or blender, combine the dark rum, lime zest and juice, brown sugar,
soy sauce and pineapple and blend until smooth. Place in a large ziplock bag, add the flank
steak and marinate overnight.
Preheat your grill to 375º. Once heated, remove the steak from the marinade and cook for
4-5 minutes on each side, or internal temperature is 130ºF for medium rare, or cook to
desired temperature. Allow to rest for 5 minutes before slicing.
Serve with tropical chimichurri.
Tropical Chimichurri Directions
In a medium bowl, combine all of the ingredients. Refrigerate for 30 minutes to infuse
before serving.
