Makes about 24 cookies
Cook Time: 20 minutes
Ingredients:
1 cup salted butter
2 1/2 cups all-purpose flour
1 tsp salt
1/2 tsp baking soda
1 tsp baking powder
3/4 cup dark brown sugar, packed
3/4 cup granulated sugar
2 tsp vanilla extract
2 large eggs, room temp
10-12 oz bag of dark chocolate chunks
1 Tbsp flaky sea salt to top
Directions:
Preheat the oven to 375 degrees.
Add butter to a medium sized saucepan set over medium heat. Melt butter and wait for it to bubble slightly. When it starts to brown, add bourbon. Set aside to let cool slightly.
In a bowl, mix all the wet ingredients: bourbon butter, eggs, and vanilla. In a separate bowl, mix all the dry ingredients: flour, salt, baking soda, baking powder, brown sugar, sugar, and chocolate chips. Pour the wet ingredients into the dry mixture to make the dough. (Try and resist temptation by not sampling the cookie dough!). Roll into golf ball sized balls, place on a baking sheet linked with parchment paper, and bake for 8-10 minutes. Don’t over-cook as you want the gooey chocolate with the bourbon kick.
As soon as they come out of the oven, sprinkle them with flaky salt. I don’t know about you, but once the kids are off to bed, try dunking in some Kahlua or Baileys – amazing
