Margarita Bars
Ingredients:
- 1/4 Cup Tequila
- 2 TBSP Cointreau
- 1 sleeve of Ritz crackers (about 100 grams)
- 1 stick of butter, melted
- 1 Tbsp sugar
- ¼ cup tequila
- 2 Tbsp Cointreau
- 1 lemon, zest and juice
- 2 limes, zest and juice
- 5 egg yolks
- 1 (14 oz) can sweetened condensed milk
- A pinch of salt
- Flaky salt for serving
Directions:
Serves 8-10
Prep/Cooking Time: 30 minutes, plus 2 hours freezing
Preheat the oven to 350°F.
Prepare the crust. In a food processor combine the crackers, butter and sugar. Process until the mixture turns into crumbs and press it in an even layer into a parchment lined baking dish (9" square pan is perfect for this). Bake for 15 minutes, then let cool slightly.
In the meantime prepare the filling. In a measuring cup or a bowl combine tequila, Cointreau and citrus zest and juice. In another bowl whisk together condensed milk and egg yolks. Pour the tequila mixture into the egg mixture and mix until smooth. Pour the filling into the crust and bake for 15 minutes. Cool completely. Place in the freezer for 2 hours. Sprinkle some flaky salt all over the top and serve.
