Bourbony Crabby Cheesy Puffs

Make It Yourself

Spirit Ingredients:

1/4 Cup
Bourbon

Food Ingredients and Preparation

Gougeres:

3/4 cup milk

3/4 cup water

2 1/2 tsp salt

1 Tbsp sugar

6 Tbsp butter, unsalted

1 1/2 cup + 2 Tbsp all-purpose flour

6 eggs (save one for egg wash)

1 cups parmesan, finely grated

(Alternative: You can purchase premade puff pastries) 

 

Bourbon Glazed Apples:

1/4 cup sugar

2 Tbsp water

1 /4 cup bourbon

1 apple, peeled and finely diced

 

Crab Salad:

1 lb crab claw meat, shells and cartilage removed 

1/2 cup crème fraiche

1/2 cup mayo

1 tsp lemon juice

2 Tbsp tarragon, finely chopped

2 Tbsp chives, finely chopped

1 cup bourbon glazed apples (see recipe) 

Salt and pepper to taste

 

Preheat the oven to 425 °F.

In a medium-sized heavy bottom pot, place the milk, water, salt, sugar, and butter. Bring to a simmer over medium high heat. Add the flour into the pot and reduce the heat to medium.  Stir for 2-3 minutes at medium heat, or until it forms a smooth uniform dough. The dough should pull away from the sides evenly. 

Pour the dough into a stand-up mixer with the paddle attachment and mix on slow speed until it stops steaming. Begin adding the eggs one by one until you have added all five eggs. Mix until five of the eggs are incorporated, and the dough is smooth. Add the parmesan and mix for 1 minute.

Place mixture into a piping bag with a 1/2 inch tip and pipe into desired shape on a parchment lined baking tray. In a small bowl, mix the remaining egg with a fork and add 1 Tbsp of water. Brush the pastry with the egg wash. Bake for 10 minutes or until golden brown.

For the bourbon glazed apples, combine the sugar and water in a small saucepan. On medium high heat, cook until a light caramel forms. Carefully shock the sugar with bourbon and bring to a simmer. Add the apples and return to a simmer. Remove from heat and cover with plastic wrap. Allow to cool.

Place the crab meat in a bowl and mix thoroughly with fingers to make sure there is no cartilage or shells (remove if found). Combine remaining crab salad ingredients and bourbon glazed apples in a mixing bowl and season with salt and pepper. 

Cut the gougeres in half and place a dollop of crab salad and bourbon glazed apples on each one.
