1. Add the applejack, apple juice, cinnamon syrup, lemon juice and bitters into a shaker with ice and shake until well-chilled.
2. Strain into a chilled coupe glass.

Directions:

1. In the bottom of a cocktail shaker, muddle 2 slices of apple.
2. Add the rest of the ingredients and shake with 1 large ice cube.
3. Strain into a rocks glass filled with ice.
4. Garnish with a cinnamon stick and apple slices.

Ingredients:

Directions:

1. In a shaker, muddle the apple until it reaches the consistency of applesauce.
2. Add remaining ingredients and ice and shake for 10 seconds.
3. Strain into a chilled cocktail glass.
4. Garnish with an apple slice.

*Chai-infused vodka: Add 1 Numi ruby chai bag and 6 ounces vodka into a Mason jar or other glass container and let infuse for 1 to 2 hours before removing tea bag.

**Chai-infused cider: Add 6 ounces organic apple cider into a small saucepan and heat over medium heat until hot but not boiling. Turn off heat and add 1 Numi Ruby chai bag. Let steep for 3 to 5 minutes and remove tea bag.

Ingredients:

  • 2 oz Brandy
  • 1 cup Apple Cider
  • 1 Cinnamon Stick
  • 1 Slice Orange (for garnish)

Directions:

In a small saucepan set over medium high heat, bring the apple cider and 1 cinnamon stick to a simmer. Remove from heat and allow to infuse for 10 minutes. Remove cinnamon stick and return infused cider to the stove and bring to a simmer again. Remove the pan from heat and add the brandy. 

To serve, pour into a mug and garnish with a cinnamon stick and orange slice.

Non-alcoholic Maine Cidah

Ingredients:
 
1 cup Apple Cider
1 Cinnamon stick, plus more for garnish
1 Orange, quartered, plus slices for garnish
 
Instructions:
 
In a small saucepan set over medium high heat, bring the apple cider, 1 cinnamon stick and orange quarters to a simmer. Remove from heat and allow to infuse for 10 minutes. Remove cinnamon stick and orange, then return infused cider to the stove and bring to a simmer again.

To serve, pour into a mug and garnish with a cinnamon stick and orange slice.

Ingredients:

  • 2 oz Empress 1908 Gin
  • 0.5 oz Sweet Vermouth
  • 0.75 oz lemon juice
  • Rosemary Thyme Simple Syrup*
  • 2 oz Top with Dry Apple Cider

Directions:

1. Add all ingredients excluding the cider to a cocktail shaker
with 1 large ice cube. Shake thoroughly, for about 30 seconds
or until the shaker feels cold to the touch.
2. Strain the cocktail into a tall glass filled with ice.
3. Top with apple cider.
4. Garnish with a sprig of rosemary and an apple slice.

*Rosemary Thyme Syrup
Ingredients:
1 Cup Water
2 Cups Granulated Sugar
3 Sprigs Rosemary
5 Sprigs Thyme
Directions:
1. Bring all the ingredients to a boil in a saucepan over
medium heat.
2. Lower the heat and let simmer for 12 minutes. Stir
occasionally.
3. Cool, strain solids, refrigerate and store for up to 10 days.
