Vodka-soaked Raspberry Vanilla BonBons

Serves 4
Prep Time: 2 hrs
Cook Time: 10 minutes

Ingredients 

1 pint raspberries, washed and dried
1 cup white chocolate chips
1 bag Milk Chocolate Chips
2 Tbs butter
1/2 cup vodka

Preparation

In a small bowl, soak the raspberries in vodka in the fridge for at least 2 hours, if not overnight.  Once soaked, remove raspberries and take vodka and use it for your favorite drink to compliment your bon bons.  Carefully add a white chocolate chip to the center of the raspberry, two if it fits, and throw in the freezer.  

Next melt the milk chocolate chips in a double boiler.   Don’t worry it’s super easy.  Add water to a medium saucepan and bring to a boil. Grab a clear heat resistant bowl, add the chocolate chips, and place the bowl with chocolate chips on top of the boiling water and gently stir.  Make sure the water does NOT get in the bowl because that will mess with your chocolate.  Add the butter and continue to stir until fully melted and remove from the double boiler.  Let cool slightly for about 5 minutes.   

Grab the raspberries out of the freezer and set aside. Place a cookie cooling rack on a sheet pan lined with aluminum foil.   

Now you are ready to make the Bon Bons.   Drop the raspberry in the chocolate and fully coat it.  Remove with a spoon and put on the drying rack.  If the chocolate is cooled, you can also roll the chocolate in your hand.  Either way, proceed with the process until all the raspberries are covered.  Make sure the raspberry is fully covered with the chocolate.  Enjoy for a little sweetness in your life.
