Sugared Rosemary Sprigs
(Yields 8 garnishes)
Ingredients:
- ½ cup sugar, divided
- ¼ cup water
- 8 rosemary sprigs
Directions
Add ¼ cup of the sugar and the water to a small saucepan and bring to a boil. Reduce to a simmer and cook for 2 minutes. Remove syrup from the heat and let cool. Dip a spring of rosemary in the cooled simple syrup, shake off any excess, then lay on a wire rack. Repeat with the remaining sprigs. Leave them to dry for about an hour until they’re sticky, but not wet. After drying, roll the sprigs in the remaining ¼ cup of sugar to coat, and set aside until needed.
