Watermelon Margarita Pops

Ingredients:

  • ¼ cup tequila
  • ½ cup cup water
  • ½ cup cup sugar
  • 2 cups watermelon, peeled and roughly chopped
  • ¼ cup lime juice
  • ½ tsp salt
  • ½ ea jalapeño, thinly sliced (optional for inclusions)
  • ¼ cup watermelon, peeled and finely chopped (optional for inclusions)

Directions:

Yields: 8 servings

In a small saucepan combine the water and sugar and bring to a boil. Remove from heat and allow to cool. In a blender or food processor, combine the cooled simple syrup, the 2 cups roughly chopped watermelon, lime juice and tequila and puree until smooth. Strain through a fine sieve into a container you can easily pour from.

If adding inclusions, add 2-3 slices of jalapeño and 1 tsp of finely chopped watermelon to eight popsicle molds. Fill each mold with the strained mixture, add the lid and popsicle sticks and freeze overnight. When ready to serve, remove the popsicles following the instructions for the molds you are using.
