Ingredients for Panna Cotta:
1 qt heavy cream
1/2 cup of sugar
1 vanilla bean
1/2 cup of plain greek yogurt
1 lime (zested)
1 1/4 tbsp honey
2 1/4 tsp unflavored powdered gelatin
3 tbsp water
Ingredients for the simple syrup topping:
1/4 cup water
1 lime (zested & juiced)
Directions:
Add the heavy cream, sugar, vanilla bean, yogurt, tequila, lime zest, and honey into a medium saucepan and bring to a simmer on medium-high heat. Do not boil. Once the liquid is at a simmer, remove mixture from heat and let it rest for 12-15 minutes.
In the meantime, dilute your unflavored gelatin with the 3 Tbsp of water in a separate bowl. After 15 minutes, add gelatin to the pan and stir mixtures together.
Add the Panna Cotta liquid into your favorite wine or martini glasses, cover, and cool in the fridge for 2-4 hours or overnight.
For the simple syrup topping, add the sugar, water, and tequila to a saucepan and keep on a low boil on the stovetop for 10-15 minutes or until the mixture thickens. Next, stir in the lime juice and zest to bring brightness to your dessert. Enjoy on Taco Night, Cinco De Mayo, or just because it is delicious.
