Strawberry Summer Salad

Make It Yourself

Spirit Ingredients:

1/4 cup
Gin

Food Ingredients and Preparation

Ingredients:

1 ea Gin Salad Dressing (recipe below)

2 bunch Artisan greens (leaves removed and rinsed)

1 pint Strawberries (halved)

8 ea Cherry tomatoes (halved)

1 ea Local Camembert cheese (cut into wedges)

1 ea Roasted Summer Corn (recipe below)

1 ea Spiced Cashews (recipe below)

To taste Salt & pepper

 

Instructions:

In a salad bowl, dress the greens with the Gin Salad Dressing and season with salt and pepper.

Gently toss the lettuce until evenly coated.

Garnish with roasted corn, spiced cashews, strawberries, cherry tomatoes, and Camembert.

 

Creamy Gin Dressing

Ingredients:

1/4 cup Gin

1/4 cup Orange juice

1/2 cup Mayonnaise

2 Ea Plum tomato, finely chopped.

1 Tbsp Fresh basil, chopped.

To taste Salt & pepper

 

Instructions:

In a bowl, combine the tomato, gin, and orange juice and mix until combined and smooth.

Fold in the mayonnaise and basil.

Season with salt and pepper and refrigerate until needed.

 

Roasted Summer corn

Ingredients:

4 Ea Ears of corn

1 Tbsp Olive oil

To taste Salt & pepper

 

Instructions:

Preheat the oven to 350°F.

Clean the corn by removing the leaves and fibers.

Place on a baking tray lined with parchment paper and season with salt and pepper.

Place corn in the oven and cook for 30 minutes, rotating every so often.

Remove corn from the oven and let it cool.

Once cool, remove the kernels by running a knife carefully down the length of the cob.

Place the corn in a bowl and refrigerate until needed.

 

Spiced Cashews (fun add-on but can also use normal cashews)

Ingredients:

2 Cups Cashews, raw & unsalted

1 tsp Paprika

1/2 tsp Ground coriander

1/2 tsp Ground cumin

1/4 tsp Cayenne pepper

1 tsp  Salt

2 Tbsp  Olive oil

 

Instructions:

Preheat the oven to 350°F.

In a mixing bowl combine all the ingredients until all the nuts are coated.

Place on a baking tray with parchment and bake for 10 minutes or until golden brown, stirring frequently.

Remove from the tray and allow to cool on a plate lined with a paper towel.
