Spiced Rum Corn Dogs
Ingredients:
- Corn Dogs
- ¼ cup spiced rum
- 1 Tbsp unsalted butter
- 1 cup fresh or frozen corn kernels
- 1 ½ cup milk
- 3 large eggs
- 1 cup cornmeal
- 1 ½ cup all-purpose flour
- 2 cups cornstarch
- ½ cup sugar
- 1 Tbsp baking powder
- 1 Tbsp + 1 tsp salt
- 6 hot dogs
- ½ gallon vegetable oil (for frying)
- Spiced Rum Honey Mustard
- 2 Tbsp spiced rum
- ¼ cup dijon mustard
- 2 Tbsp honey
- ½ tsp cayenne pepper
- ½ tsp smoked paprika
- ¼ tsp garlic powder
- Pinch salt
Directions:
Makes 6 corn dogs, serves 3-6
Corn Dogs
Preheat vegetable oil in a large saucepan or fryer to 350ºF.
In a medium saucepan over medium-high heat, melt the butter. Once melted, add the corn and cook for 10 minutes or until lightly caramelized. Deglaze the pan with 1 oz spiced rum. Add the corn, milk, eggs, and remaining spiced rum to a food processor, then blend for 30 seconds. Next, add the dry ingredients and blend for an additional 30 seconds. Pour the batter into a container that is roughly 6” deep for dipping.
Place each hot dog on a skewer and dunk in the batter until it’s completely coated. Place in the fryer and cook for 5 minutes or until golden brown. Carefully remove with tongs and place on a paper towel lined tray. Serve with spiced rum honey mustard.
Spiced Rum Honey Mustard
Combine all ingredients in a bowl and whisk together. Adjust seasonings to taste. Refrigerate until needed.
