Raspberry Lime Rickey

Ingredients:

  • 1.5 oz Gin
  • 1 oz Lime Juice
  • .75 oz Raspberry Syrup
  • 4 oz Sparkling Water

Directions:

Combine lime juice, raspberry syrup, gin, and ice cubes in a shaker and stir.

Fill a mason jar with ice and pour in the gin mixture.

Top with sparkling water and garnish with lime wedges and raspberries.

 

Raspberry Syrup

Ingredients:

1 Cup Sugar

3/4 Cup Water

1 Cup Fresh Raspberries

 

Instructions:

In a small sauce pot, combine the sugar, raspberries, and 3/4 cup water. Stir until sugar is dissolved and bring to a boil.

Reduce to a simmer and cook for 5 minutes or until the raspberries break down, stirring often.

Use a spatula to press down on the berries to assist in muddling.

Strain with a fine mesh sieve using the spatula to force everything through. Do this until all the seeds are strained out.

Allow time to cool.
