A green cocktail

Mr. Basil's Sour

Ingredients:

  • ½ cup water
  • ½ cup sugar
  • ½ cup basil leaves
  • ½ cup spinach
  • 2 oz gin
  • ½ oz lemon juice
  • ½ oz lime juice
  • ½ oz basil simple syrup
  • to garnish basil leaf

Directions:

Yields: 1 cocktail

Basil Simple Syrup Directions:

In a small pot, combine the water and sugar and bring to a boil. Add the basil and spinach, then reduce to a simmer and cook for 1 minute. Remove from the heat and allow to cool for 30 minutes. Once cooled, place in a food processor and blend for 1 minute. Strain, and refrigerate until needed. (You’ll only use ½ oz of the syrup in this recipe, but it will keep for up to a week if refrigerated in an airtight container. After 24 hours the green will begin to oxidize and will slowly turn brown, so use it before then if you’re looking for a green cocktail!)

Cocktail Directions:

Combine the gin, lemon juice, lime juice and basil simple syrup in a shaker filled with ice. Shake for 15 seconds or until chilled. Strain into a glass filled with ice and garnish with fresh basil.
