Ingredients
4 TBSP melted butter
2 C All-purpose flour
1 2/3 C sugar
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
2/3 C whole milk
2/3 C olive oil
3 eggs at room temperature
1/3 C Campari
1 large grapefruit (zest and juice)
1 orange (zest and juice)
1 lemon (zest and 1 TBSP juice)
Directions:
Preheat the oven to 350º and grease a 9-inch springform pan with some butter or nonstick spray.
In a bowl combine all the dry ingredients: flour, sugar, soda, powder and salt.
In another bowl whisk the wet ingredients: milk, oil, butter, eggs, Campari, juice and zest of the citrus. Fold in the dry ingredients.
Scrape the batter into the prepared pan and bake for 45-55 mins until a wooden toothpick comes out dry when you test the cake. Let the cake cool completely before removing it from the pan.
