Amaretto Basque Cheesecake

Ingredients:

  • 6 tbsp amaretto
  • 15 graham crackers, crushed
  • 2 tbsp unsalted butter, melted
  • 2 lbs cream cheese
  • 1 ½ cups sugar
  • 1 tsp salt
  • ¾ milk
  • 5 large eggs
  • 1 cup sour cream
  • 1 tbsp vanilla extract
  • 1 tbsp almond extract
  • ¼ cup all purpose flour
  • 1 orange, peeled & cut into 8-10 slices
  • ¼ cup whole almonds, roasted & salted

Directions:

Yields: 8-10 servings

Preheat the oven to 350°F and grease a 9 inch springform pan.

In a small bowl, combine the crushed graham crackers and melted butter. Add the mixture to the prepared pan, pressing down with a measuring cup or spatula to create an even crust.

In a stand mixer, combine the cream cheese, sugar and salt. Mix with a paddle attachment on medium speed for 5 minutes. In a medium bowl, whisk together the eggs and milk. With the mixer on low speed, slowly stream in the egg-milk mixture until just combined. Scrape down the sides of the bowl, then add the sour cream, flour, vanilla and almond extracts, and Amaretto. Mix on medium-low speed until smooth.

Pour filling into the pan with the prepared crust and bake for 1 hour and 15 minutes. After the elapsed time, turn off the oven and allow the cheesecake to fully cool in the oven. Once cooled, refrigerate until ready to serve. Garnish with orange slices and almonds.
