Serves 4-6, 20 minutes, then cooling time
1 10 oz. Package of White Chocolate Melting Wafers
2/3 c. Heavy Cream
2 tbsp. Butter
3 Large Eggs, separated
1/2 c. Vodka
1 c. Crushed Candy Canes
1 tbsp. Powdered Sugar
Create a double boiler—wait, it’s super easy. Place a glass bowl on a saucepan with boiling water—Done. Add the chocolate into the glass bowl and melt. Next, add butter and stir. Once all melted, remove from heat.
Separate the egg whites and yolks. Save the yolks for another day. Whip the egg whites with a mixer until you have stiff, high peaks.
Next add the sugar, cream, and vodka in one cold bowl. Whip until it’s that gorgeous fluffy consistency that you want to dive into.
Now for the folding. Fold the egg whites into the melted chocolate. DON’T MIX. Make sure you fold all the egg whites in. Now fold the whipped vodka cream into the chocolate mixture.
Pour into a glass serving bowl, shot glass or mason jar. First add the mousse, then the crushed candy canes, then mousse and top with more whipped cream and crushed candy canes. Put in the fridge for 2-3 hours to cool. Can be made upto a few days in advance.
