Cook Time: 30 minutes
1 cup ricotta
1 large orange, segmented, chopped, about ¾ cup
1 cup cranberries
2 Tbsp fresh thyme
2 tsp honey
½ cup sugar
2 packages phyllo cups (found in the freezer isle near pie crusts)
Preheat the oven to 375 degrees.
In a small saucepan over medium heat, add the chopped orange segments, cranberries, sugar and ½ cup vodka. Cook for 5-8 minutes until the sugar is dissolved.
In the meantime, add honey and 1 Tbsp vodka into a bowl and mix to combine. Add in the ricotta, whip with a hand mixer, and set aside.
To assemble, add 1 tsp of the ricotta to the phyllo cup and top with the vodka orange mixture. Bake for 10 minutes. Remove from the oven and sprinkle fresh thyme leaves on top
