Rum Raisin Baked Apples

Ingredients:

  • 1/4 cup Rum
  • 2 Apples (Cortland or Macintosh), peeled and cored but left whole
  • ½ cup Golden Raisins
  • 1 Tbsp Maple Syrup
  • 1 tsp Unsalted Butter
  • ¼ cup Rum
  • Vanilla Bean Ice cream
  • Salt

Directions:

Serves 2

Prep time: 5 minutes

Combine the raisins, rum, butter, and maple syrup in a small bowl.

Place whole apples in a microwave-safe bowl. Then top with rum raisin mixture and microwave for 3 minutes 30 seconds.

Remove from microwave and sprinkle with a hint of salt. Top with your favorite ice cream or gelato.
