Rhubarb Mojito

Ingredients:

  • 2 oz white rum
  • 1 ½ oz rhubarb simple syrup
  • 2 oz lime juice
  • 5 fresh mint leaves
  • Top with club soda
  • Garnish with rhubarb ribbon & mint
  • 2 cups chopped rhubarb
  • ½ cup water
  • ½ cup sugar

Directions:

Yields: 1 cocktail

Add mint and lime juice to a shaker and muddle well. Add rum, rhubarb simple syrup and ice and shake until chilled. Pour into a highball glass with ice and top with club soda. Garnish with a rhubarb ribbon and mint sprig.

Rhubarb simple syrup directions 
Combine rhubarb, sugar, and water in a heavy-bottomed saucepan and bring to a boil. Lower heat to a simmer, stirring occasionally, until the fruit is soft and the liquid has thickened slightly, about 20 minutes.

Allow to cool slightly, then carefully pour through a fine-mesh strainer into a glass jar. Use the back of a spoon or spatula to push gently and get as much syrup through as possible. Allow the syrup to cool completely before covering and storing in the fridge for up to 2 weeks.
