Paloma Pear Salsa

Ingredients:

  • 1/4 Cup Blanco Tequila
  • 4 Anjou or local pears (not too ripe), diced
  • ½ cup fresh pomegranate seeds or dried cranberries
  • ¾ cup chopped candied walnuts
  • ½ cup crumbled Gorgonzola or goat cheese
  • 1 grapefruit, segmented and chopped
  • 2 Tbsp juice from segmented grapefruit
  • ¼ cup tequila
  • 2 tsp chopped fresh rosemary
  • ¼ tsp cayenne pepper
  • ½ tsp cinnamon

Directions:

Serves 6-8

Prep/Cooking Time: 20 minutes

Combine the chopped pears, cranberries or pomegranate seeds, walnuts, grapefruit juice, tequila, rosemary, cayenne and cinnamon in a medium bowl. Gently fold in the Gorgonzola. Serve immediately with your favorite grain cracker, veggie or chip combination.
