Paloma Pear Salsa
Ingredients:
- 1/4 Cup Blanco Tequila
- 4 Anjou or local pears (not too ripe), diced
- ½ cup fresh pomegranate seeds or dried cranberries
- ¾ cup chopped candied walnuts
- ½ cup crumbled Gorgonzola or goat cheese
- 1 grapefruit, segmented and chopped
- 2 Tbsp juice from segmented grapefruit
- ¼ cup tequila
- 2 tsp chopped fresh rosemary
- ¼ tsp cayenne pepper
- ½ tsp cinnamon
Directions:
Serves 6-8
Prep/Cooking Time: 20 minutes
Combine the chopped pears, cranberries or pomegranate seeds, walnuts, grapefruit juice, tequila, rosemary, cayenne and cinnamon in a medium bowl. Gently fold in the Gorgonzola. Serve immediately with your favorite grain cracker, veggie or chip combination.
