Marinades, Dressings and Sauces

Spirit Ingredients:

1/2 Cup
Bourbon
1/2 Cup
Rum
2 tbsp
Tequila
2 tbsp
Vodka
2 tbsp
Rum

Food Ingredients and Preparation

Cherry Bourbon Barbecue Sauce
Perfect on chicken, pork, ribs, brisket and shrimp

3 cups ketchup
1 cup brown mustard
2/3 cup apple cider vinegar
1/2 cup bourbon
1 tbsp smoked paprika
1 tbsp ground mustard
1/2 cup honey
3/4 cup brown sugar
3 cloves garlic, crushed
1/2 tsp cayenne
1 tsp kosher salt
1 cup fresh cherries, pitted and halved (optional)

Combine all ingredients (and cherries if you like your barbecue sauce on the sweeter side) in a stock pot and bring to a simmer, cooking over low heat for 10 minutes. 

Enjoy as a marinade or finishing sauce on grilled chicken, pork, ribs, brisket, or shrimp. 

Crushed Pineapple Rum Marinade
Perfect for chicken, fish, and veggies

2 cups pineapple, roughly chopped
1 lime, juiced
1 jalapeño
1/2 cup cilantro, stems included
1/2 cup rum
1/4 cup olive oil
1 tsp kosher salt

Combine all ingredients in a food processor. Process until crushed, resulting in a consistency that is smoother than a salsa but chunkier than a marinara. 

Enjoy as a marinade or a fresh sauce drizzled on top of grilled chicken, fish or veggies.  

Tequila & Lime Salsa Verde
Perfect for tacos, salsa, steak, fish, chicken, and veggies

4 tomatillos
1 shallot, roughly chopped
1/2 small red bell pepper
1 lime, juiced
1 small jalapeño
2 tbsp tequila
1 cup cilantro, stems included
kosher salt, to taste 

Combine all ingredients in a food processor. Process until crushed, resulting in a consistency that is smoother than a salsa but chunkier than a marinara. Season to taste with salt. 

Enjoy as a fresh sauce or marinade on steak, fish, chicken, and veggies, or as a simple dipping sauce for chips. Also tastes great drizzled on tacos. 

Vodka Middle Eastern Chimichurri
Perfect for steak, chicken, shrimp, veggies and to mix in rice

1 bunch flat-leaf parsley, stems removed
8 mint sprigs, steps removed
1 lemon, zested and juiced
2 tbsp vodka
1 tsp crushed red pepper flakes
1 large garlic clove, peeled and smashed
1/4 cup olive oil
1/4 tsp kosher salt

Combine all ingredients in a food processor. Process until smooth. 

Enjoy as a fresh sauce or marinade for steak, chicken, shrimp, veggies, or rice. 

Vodka Blueberry White Balsamic Dressing
Goes wonderfully with burrata and other creamy cheeses, salads, fruit, and chicken

1 pint blueberries
1/3 cup white balsamic vinegar
2 tsp vodka
1/4 cup olive oil
smoked salt, to taste
pink peppercorns, crushed, to taste

In a small saucepan, bring white balsamic vinegar and blueberries to a simmer, cooking over low heat for about 15 minutes or until blueberries begin to pop and the smell of vinegar subsides.  Remove from heat and mix in the rest of the ingredients, seasoning to taste with smoked salt and crushed pink peppercorns. Let cool. 

Enjoy drizzled on top of burrata or other creamy cheeses. Also pairs well as a dressing on salads, fruit and grilled chicken.

Tequila Cucumber Watermelon Lime Salsa
Perfect for tacos, salsa, fish, and chicken

2 cups watermelon, diced
1/4 cup tequila
1 cup cucumber, diced
1 small shallot, diced
1/4 cup red bell pepper, diced
1/2 cup cilantro, stems removed and diced
1 lime, zested and juiced 
1 jalapeño, diced (optional)
salt, to taste

Combine all ingredients (and the jalapeño if you like your salsa on the spicier side) in a medium bowl. Season to taste with salt. Serve immediately.

Enjoy as a fresh salsa for tacos, fish, and chicken, or as a simple dipping sauce for chips. 

Caramelized Rum Grape Vinaigrette
Perfect as a dressing for green salad and herbed potato salad. 

2 cups red grapes 
4 tbsp rum, divided
4 tbsp honey, divided
2 sprigs rosemary
1/4 cup red wine vinegar
1 tbsp dijon mustard
1/2 cup good quality olive oil
salt, to taste
pepper, to taste

In a large saute pan over medium heat, combine the grapes, 2 tbsp rum, 2 tbsp honey and rosemary sprigs. Cook, stirring occasionally, for about 6 to 8 minutes, or until the grapes begin to burst. Remove from heat and take out the rosemary sprigs, removing the leaves from the stems. Combine rosemary leaves, caramelized grapes, 2 tbsp rum, 2 tbsp honey, red wine vinegar, dijon mustard, and olive oil in a food processor. Process until smooth. Season to taste with salt and pepper.

Pairs well drizzled over a green salad, as well as a dressing for potato salad with fresh herbs and chives.
