

Lamb Parsley Kabobs with Bourbon Pomegranate Glaze
Ingredients:
- Bourbon
- 2 lb lamb
- 1 small onion
- 1 bunch flat-leaf parsley, put a few sprigs aside for garnish
- 1 tsp cinnamon
- Salt and pepper to taste
- 1 oz bourbon
- ΒΌ cup pomegranate molasses
- 1 Tbsp oil
- Pomegranate seeds for garnish

Preparation
In a food processor, mix together the onion and parsley until pureed. In a large mixing bowl, add the lamb, onion parsley mixture, cinnamon, salt and pepper.
Once the mixture is mixed together take 2 Tbsp of mixture in the palm of your hand and make into a tube like form. Repeat until all the mixture is made into spheres and place on top of an aluminum foil covered baking sheet. You will cook these spheres and then insert the skewers after.
Set the oven to broil. Broil each side for 3 minutes.
In the meantime in a small saucepan, mix together the pomegranate molasses and bourbon. Simmer for 5 minutes.
After the lamb kabobs are cooked, add the skewers in at the tip and place on your serving dish. Drizzle the glaze over the kabobs and top with pomegranate seeds.
Enjoy as an appetizer or with rice pilaf and minted cucumber, and a feta tomato salad for the perfect Middle Eastern touch.
