Grilled Focaccia & Rum Butter

Spirit Ingredients:

Dark Rum

Food Ingredients and Preparation

Focaccia
Ingredients (You can skip this step and use store bought focaccia instead and start at the grilling part of the instructions)
1 Envelope active dry yeast (or 2 ¼ tsp)
2 tsp Honey
2½ cups Water
5 cups All-purpose flour
1 Tbsp Kosher salt
8 Tbsp Olive oil (divided in half)
5 Tbsp Unsalted butter (room temperature, divided into 1 Tbsp and 4 Tbsp)
1 tsp Fresh rosemary, leaves removed and chopped
1 tsp Fresh thyme, leaves removed and chopped
1 Tbsp Fresh parsley, leaves removed and chopped
To taste Flaky sea salt
4 Garlic cloves, finely chopped

Dark Rum Honey Butter
Ingredients
1 oz Dark Rum
2 cups Unsalted butter, room temperature
4 oz Honey
1 tsp Cinnamon
1½ tsp Salt

Directions

Focaccia
In a medium sized bowl, combine the yeast, honey and water. Mix together and allow to sit for 5 minutes. Add the flour and kosher salt to the yeast mixture, and mix until a loose dough is formed. Grease a second bowl with 4 Tbsp of olive oil and add the dough. Cover with plastic wrap, and refrigerate for 8-12 hours until it has doubled in size.

Grease a 13”x9” baking pan with 1 Tbsp butter. Place the dough on a floured work surface and gently knead until it comes together. Place the dough in the buttered baking dish, cover, and place in a warm spot until it doubles in size (about 1 hour).

Preheat the oven to 425°F.

Sprinkle remaining 4 Tbsp olive oil over the dough and massage in. Using your fingers, press into the dough to create dimples (as if you were playing the piano) and press the dough to the sides of the pan. Place the dough in a warm spot, covered for 1 hour, or until it returns to its doubled size.

Once the dough has risen again, sprinkle the herbs and flaky salt on top and place in the oven. Bake for 20-30 minutes or until golden brown, remove from the oven and cool to room temperature.

While the focaccia cools, add the remaining 4 Tbsp butter in a small pan and melt on low heat. Add the finely chopped garlic cloves and saute for 2 minutes or until fragrant, and remove from heat.

Preheat the grill to medium heat (350°F).

Cut the focaccia into the desired shape and brush both sides with the garlic butter. Grill on each side for 1 minute or until nice and crispy.

Serve with Dark Rum Honey Butter.

Rum Butter
Combine all ingredients in a stand-up mixer and mix until combined.
