Gin & Tonic Roasted Salmon with Lime Cilantro Sauce

Because all the alcohol is removed this is family-friendly and one of my kiddos favorites. Serves 4-6.

Prep Time: 10 minutes

Cook Time: 20 minutes

Heat oven to 425°F.

Line a large Pyrex baking dish with parchment paper. Clean the salmon. Pat dry. Add salmon to the baking dish.

In a small bowl, combine the gin, tonic, juice of 1 lime, and pour over the salmon. Sprinkle with kosher salt and the lime zest.

Bake for 18 minutes.

While the salmon is cooking, add gin to a small saucepan on medium heat and reduce to remove the alcohol, about 3-5 minutes.

In a food processor, add reduced gin, lime, jalapeno, olive oil and cilantro. Blend for 2 minutes.

Remove salmon from the oven, top with sauce, and serve with white rice and roasted vegetables.
