16 ea Green Olives
4oz Blue Cheese, cut into 1⁄2 cubes
6 Eggs, hard-boiled
2 Tbsp Mayo
1 Tbsp Crème Fraîche
2 tsp Parsley, finely chopped
2 tsp Dry Vermouth
1 tsp Olive Juice
1⁄8 tsp Cayenne Pepper
1⁄4 tsp Salt
1⁄8 tsp Ground Pepper
1 Piping bag, star tip preferrable
Finely chop 4 of the olives and set aside.
Cut the eggs in half lengthwise and remove the yolks. In a small bowl, mash the yolks with a fork, add the chopped olives, mayonnaise, crème fraîche, parsley, gin, vermouth, olive juice, and seasonings and mix together. Place the mixture into a piping bag with a star tip and pipe into egg white halves.
Garnish with a full green olive and blue cheese on a toothpick.
