Caramelized Rum Grape Vinaigrette
Ingredients:
- 4 tbsp Rum
- 2 cups red grapes
- 4 Tbsp honey, divided
- 2 sprigs rosemary
- ¼ cup red wine vinegar
- 1 Tbsp Dijon mustard
- ½ cup good quality olive oil
- 4 Tbsp rum, divided
- Salt, to taste
- Pepper, to taste
Directions:
Perfect as a dressing for green salad and herbed potato salad.
Makes about 1 cup

Cook Time: 8 minutes
In a large sauté pan over medium heat, combine the grapes, 2 Tbsp rum, 2 Tbsp honey, and rosemary sprigs. Cook, stirring occasionally, for about 6 to 8 minutes, or until the grapes begin to burst.
Remove from heat and take out the rosemary sprigs, removing the leaves from the stems. Combine rosemary leaves, caramelized grapes, 2 Tbsp rum, 2 Tbsp honey, red wine vinegar, Dijon mustard, and olive oil in a food processor. Process until smooth. Season to taste with salt and pepper.
Pairs well drizzled over a green salad, as well as a dressing for potato salad with fresh herbs and chives.
