Belfry Double Barreled Bourbon Whiskey is a collaborative project with our friends and nextdoor neighbors at Bissel Brothers Brewing. After they age their “Angels with Filthy Souls” maple porter and their “Sigel” oatmeal stout, we take the empty barrels and fill them with our Bourbon Whiskey and let it age for another six to ten months.
What emerges is still a fairly youthful whiskey with an extra warmth and complexity that’s wrapped in a touch of vanilla and butterscotch. The texture is soft and silky with an intriguing chewy softness. This one’s a sipper, either straight from the bottle or with a little chunk of ice.
Belfry is produced in ultra-small batches and as a limited release—our first batch was a mere 1200 bottles. Stay tuned to our social media feeds to find out about availability and pricing.
