They ferment this bourbon with the same single malt yeast strain used in their wheated bourbon, bringing out deep, nuanced flavors. It's then aged for at least five years, exceeding the Bottled in Bond requirement of four. The barrels are built from staves seasoned for twelve months, reducing tannins for a smoother, more balanced whiskey. Each barrel undergoes a medium toast before receiving a three char, a process that enhances complexity while maintaining access to the deep flavors within the wood.
