2. Add tequila, lime juice, agave syrup and ice, and shake until well-chilled.

Watermelon Aperol Spritz

Ingredients:

  • 1 Bottle Aperol
  • 1/2 Watermelon
  • 1 Tbsp Olive Oil
  • 1/4 cup Lemon Juice
  • 1/8 tsp Salt
  • 4 - 12oz cans Seltzer

Directions:

Preheat the grill to medium-high heat (425 °F).

Cut 8 pieces of watermelon into triangles for garnish, about ½ inch thick. Brush the triangle garnishes with olive oil and place the brushed side down on the grill. Cook for 1-2 minutes, or until slightly charred. Remove with tongs and allow to cool.

Peel the remainder of the ½ watermelon and blend in a food processor or blender until smooth. Add the aperol, lemon juice and salt and pulse for 1 minute. Strain the watermelon mixture and add to a pitcher with the seltzer and ice.

Pour into glasses and garnish with the grilled watermelon.

Combine all ingredients in a cocktail shaker, shake, then strain into a salt-rimmed rocks glass with fresh ice and garnish with a watermelon wedge.

*Combine 2 cups of diced watermelon and 1.5 cups of simple syrup in a blender and blend on high until smooth and then strain.

  • 1.5 oz Vodka
  • 1.5 oz Watermelon Juice
  • 0.5 oz Lemon Juice
  • 0.5 oz Simple Syrup
  • 4 Mint Leaves
  • 1 Watermelon (slice for garnish)
  • 4 Mint Leaves (for garnish)

Directions:

1. Add all ingredients into a pitcher.
2. Add ice.
3. Mix well.
4. Pour into glasses and garnish with watermelon and mint leaves
Serves 6-8.
