Watermelon Mojito Granita

1/2 whole seedless watermelon, cut in chunks
2 limes, juiced
1/2 cup simple syrup
1/2 cup white rum
15-20 leaves mint, torn into small pieces
Pour mixture into a flat metal pan and freeze for about 3 hours. Use a fork to break the mixture up until it is slushy and fluffy. Repeat this process 2 hours later and again until the mixture is completely frozen and has a lofty, granita texture. Serve with more rum if desired!
