Grate the fresh ginger finely; combine with vinegar, maple syrup, and lemon or lime juice in a pitcher. Stir until maple syrup is dissolved, chill until cold.

To serve, pour switchel and citrus slices into an ice-filled glass, top with water or seltzer.
